If you think you might not like oysters, then try them this way.150g butter, a plump and juicy clove of garlic finely chopped, 2 shallots, finely chopped, a handful of tarragon leaves, chopped if large, juice of half a lemon, 12 oysters, opened, a handful, about 6 tablespoons fresh breadcrumbs.
Mash the butter with the garlic, shallots and tarragon leaves, then stir in the lemon juice. Place the opened oysters in a grill pan. A deep layer of salt or dried beans will keep them from rolling over and spilling their load. Spread dollops of the flavoured butter over the oysters, then dust quite thickly with breadcrumbs. But not so thickly as to cover completely the butter that buries the oysters.
Cook them under a hot grill till the butter starts to bubble and the crumbs brown a little. They should be done in about five minutes.
